Smith extols pressure cooking’s benefits, including fuel efficiency, faster cooking time, reduced fats, higher levels of nutrient retention and the ability to create lower-cost one-pot meals. Several pages are devoted to exact cooking times for specific vegetables, meats, fish, beans and even pasta shapes. Though there are a fair number of recipes featuring legumes, for example, this cookbook is mainly geared to a meat-eating audience. As might be expected, a good deal are stewlike creations, but Smith covers eclectic ground with dishes like Italian Seasoned Veal Tortellini Stew; Walnut Chicken Braised in Pomegranate Juice; and Mexican Posole (pork stew with green chile and hominy). Outside of the one-pot meals are ragus, pilafs and pulled meats for sandwich stuffing. Smith even rounds up some intriguing desserts like Sweet Dumpling Flan with Caramel Sauce and a basic bread pudding with six variations. I love looking at the pictures! After years of paddling the Adirondacks and visiting Great Camps and museums, I love this stuff even more!
The Adirondack "Great Camp" style bears witness to the long and interesting history of New York State's northeastern corner, from the splint basketry and bark sheathing used by the native people, the furs and skins so prized by the earliest white traders, the thick walls built by the French soldiers eager to protect their North American strongholds, and the unpeeled log structures of early lumberjacks. The trilogy of "Woodswoman" has gone one step further by allowing the public one more look into Dr. Anne LaBastille's unique wilderness life. One might get the feeling that after dozens of conservationist and environmental oriented books that Dr. LaBastille might tire of letting the public peer into her private life. Fortunately for us, this didn't happen.
"Woodswoman IIII" is more than just another tapestry of stories and events of these last five years. It marks an abrupt change in the life of a woman who cannot live without a tough balance of serene isolation and public duty. It is a mix of wilderness ideologies and humorous, but tough modern realities.
The reader is always treated to nearly mystical stories of the woods. These include retreating from the remote cabin on the last day of winter thaw as six inches of water cover her remote lake. The ice cold winter water bubbles up through holes from the weight of the ice as she passes over. It is harrowing. It's hard to believe she uses no computer and the one telephone line is only shared with a FAX machine.
This latest edition in the "Woodswoman" series contains a more modern note than the previous, but that may be the point. Society moves on and one can only ignore the madness of progress so far before your life becomes less meaningful. The last chapter called, "Trust" seems to embody Anne LaBastille's philosophy about her lifestyle. It is touching, moving and without regrets. This edition lives up to its remarkable predecessors.

Determined not to let these new problems destroy her outlook or her life, Dr. LaBastille begins to build a second cabin - further into the wilderness. Encompassing both the new thrill of building a more isloated respite along with some freinds, brings another insight into Anne LaBastille's life ten years later. Numerous elderly Adirondack guides become great friends, sharing their own stories of the wilderness. A new romance evolves and the author has to deal with the reality of having to deal with both worlds. This book speaks not only of the wilderness, but the grand people that make and keep it unique. Of course, Dr. LaBastille's dogs are always given star treatment and her love of these animals is heartfelt. More refined and a little less naive, this second 'woodswoman' book will break and warm your heart at the same time.

The updated ninth edition of this compendium of food production information is the hefty result of over three decades of intelligence-gathering by Emery, whose initial encyclopedia project was designed to help newbies in the "back to the land" movement of the early 70s learn self-sufficiency. Tasks Emery covers run the gamut from the simple to the complex, and from the common to the strange, and include how to: bake bread, make seed milk, sew a cornhusk bed, dry flowers, prune kiwi vines, culture yogurt, plant beans, keep bees, build a fish pond, artificially inseminate a turkey and help a cow who's eaten nails. In chapters such as "Grasses, Grains & Canes," "Food Preservation" and "Goats, Cows & Home Dairying," Emery offers advice, recipes (including many that are vegan), folk wisdom and plenty of hard facts. Though it's definitely not aimed at them, urbanites will find the recipes and resources lists (of herb periodicals, nurseries, organizations dedicated to simple living, etc.) useful, the trivia interesting ("catsup" was originally a thick sauce made from any fruit or vegetable), and Emery's personal reflections ("Once upon a time, in the bad old ways when the Communists and the Western countries were poised on the brink of mutual nuclear annihilation...") compelling. Even readers with no plans to raise sheep, sell homemade cheese or plant millet will find this a fascinating cultural document.

This large, generously illustrated manual is an excellent primer on owner-designed and site-inspired building. Snell, who wrote the eco-friendly The Good House Book, and Callahan, a more conventional but highly experienced builder and contractor, take readers step-by-step through the creation of a charming little guesthouse, demonstrating a variety of "green" techniques along the way. They start with an introduction to building fundamentals and how alternative materials can provide the necessities of housing: structure, climate-control and separation from as well as connection to the outer world. Next comes a mini-course in design. But the bulk of the book is hands-on: the nuts-and-bolts of siting; foundations; flooring; living (plant-covered) roofs; and cob, cordwood, straw-bale and modified stick frame walls—although the book's minimal treatment of electricity and plumbing, and how to integrate them with unfamiliar materials like cob or straw-bale, disappoints. Snell's tendency to decry the sins of modern architectural practice can become exasperating, but doesn't diminish the value of his extensive experience-derived knowledge; and the grace and beauty of the authors' building project, featuring Callahan's fine finish work, is inspiring. The abundance of color photos detailing the construction process, supplemented by examples from indigenous buildings around the world, is particularly helpful. (Jan.)

This is an update of Jerry Minnich and others' The Rodale Guide to Composting ( LJ 5/1/79), which itself updated J.L. Rodale's Complete Book of Composting (Rodale Pr., 1960. o.p.). The broad spectrum of information given will be useful from backyard urban gardening on up to industrial, municipal, and farm recycling. The first quarter of the book gives you all you ever wanted to know on the science of composting--and more--along with some history. A discussion of materials, methods, structures, equipment, and uses is followed by a brief look at large-scale composting. The writing is an uneven mix of scientific detail and the anecdotal. Chemical reactions are described in exquisite detail, and yet most quotes, while attributed, are neither dated nor their source given. Stu Campbell and Kathleen Bond Borie's Let It Rot: The Gardener's Guide to Composting ( LJ 1/91) is more readable and inviting for the individual gardener. While useful for its in-depth, detailed coverage, Rodale's almost-textbook is recommended only for comprehensive gardening collections.

Unlike electric ice cream makers and pasta machines, the bread machine hasn't really enjoyed wholehearted acceptance in the culinary world. There are hordes of enthusiasts, no question about it, but many who consider themselves serious bakers look upon the machine with a skeptical eye. However, the newer generation of machines turns out excellent bread, and after being bombarded with know-how by this James Beard Award-winning writer, even the most reluctant may be inspired to give it a go. The book opens with an excellent orientation to both the machine and the basics of bread making. Step-by-step instructions are given for a few basic loaves. (Less helpful is a "what went wrong" section, which displays a firm grasp of the obvious.) The 300-plus recipes are so far-ranging it's hard to believe a bread exists that isn't included here. There are white breads and sourdoughs, all manner of whole wheat and grain breads and breads featuring nuts and dried fruits, cheese and savory flavorings. There are crusty ciabattas, a sturdy Irish Potato Brown Bread and a variety of challahs. Hensperger also includes dozens of sweet breads, including croissants, coffee cakes and traditional holiday confections. There are recipes for pizza and flatbreads, as well as selections from a variety of traditions, from Alsatian kugelhopf to Zuni Indian bread. She even offers instructions for using bread machines to make pasta, jams and chutneys. By the end, Hensperger (The Bread Bible, etc.) will have convinced readers that it's time to overcome any qualms and get to work. The bread machine is here to stay. (Aug.)
